Pumpkin Spice Chicken Stew

Leigh Chmilar Pumpkin Spice Chicken Stew RecipeIt’s winter. It’s cold and all I want to eat are warm stew-like meals, so I threw this together with my leftover pumpkin puree. The great thing about this one is you can throw all the ingredients into the slow-cooker and voila!

Leigh Chmilar Pumpkin SpicesIngredients:
4 Chicken Breasts (halved)
4 Cups Chicken Broth
1 TBSP Salt
1 TSP Pepper
4 Large Carrots, Diced
1 Cup dry Quinoa (or 4 large diced potatoes)
2-3 Cups Pumpkin Puree
1 TSP Cinnamon
1/2 TSP Ground Ginger
1/4 TSP Allspice
1/4 TSP Nutmeg

 

Directions:

1. Mix together the spices.
2. Put all the ingredients in a slow-cooker, mix togerther, and cook on medium for 6 hrs.
3. It’s literally that easy…
4. Serves 8
