The Ultimate Breakfast: Banana Protein Pancakes

Banana Pancake

I literally eat this every morning…unless I sadly run out of steel cut oats (always have some pre-cooked in the fridge!)… 

Ingredients:

  • 1 Banana
  • ½ Cup Steel Cut Oats (pre-cooked)
  • 2 eggs
  • dash of cinnamon
  • 2 strawberries
  • 2 tbsp greek yogurt for topping
  • ½ tsp coconut oil

Directions:

  • Blend the banana, steel cut oats and eggs in a small blender or using a hand mixer
  • Heat ½ tsp coconut oil in a small non-stick frying pan on medium heat – hot enough that a drop of water sizzles on contact
  • Pour mixture into pan and allow to cook until the edges are firm and not too liquidy to flip
  • Flip the pancake and allow a few minutes to cook through

Top with greek yogurt and sliced strawberries for sweetness, and sprinkle with cinnamon 🙂
